Great thinkers over the ages must surely have tackled this question. In Genesis, why does God create male and female animals (and plants, for that matter), but at first, only a male human being?

No no - God realised that it wasn't good for Adam to be all alone. Check out Genesis 2:18, from the KJV:

Ah, actually, revisiting the text solves my problem. Famously, there are two mutually contradictory stories in Genesis 1 and 2; in Chapter 1, Adam and Eve are created simultaneously, and in Chapter 2, the animals are created after Adam.
