Another normal day. Hopefully a pattern is developing here.

I'm working on perfecting the chocolate zucchini cake recipe I found online. It's low-fat and sugar-free, and pleasingly gooey, but needs a bit more umph in the flavour department. The latest iteration has coconut essence, crushed peanuts, and a little naughty chocolate icing.

Chocolate zucchini cake sounds amazing. My mum makes a superb chocolate avocado mousse. Sounds like a similar idea.

Mmmmmmmmm.

Mother Savantesque says:

"3 small ripe avocados (or 2 large ones)
50g cocoa (poor thing!)
50 ml water
100 ml maple syrup
splash of vanilla essence (optional)

Whizz them all together in your food processor and enjoy!!!!!!!"

Not many desserts are worth seven exclamation marks.

I should explain that Cocoa is the name of my cat.

There is an alternative recipe here. (http://aww.ninemsn.com.au/article.aspx?id=43671&subsectionname=archive)

God dammit, I'm going to post this to my own journal too. It's too good not to share.

I feel the same way about anything that combines sweet fruits and onions, like a large number of bizarre (to me, at least) salad and salsa recipes. I may be fairly accused of being Sam-I-Am for this, but the sheer idea is so offputting! :-P

Nonetheless *happy chewing noises*

In home ec we use to make a chocolate Zucchini cake and entered in The royal show a couple of times .

The recipe have has two types of flour , wholemeal self raising(I think this what gives a nutty taste) and ordinary self raising .

I could send a copy of my recipe and maybe you could tweak that to suit you *shrugs*.
